Gâteau moelleux amandes, citron et fraise ou mon gâteau de Pâques (pour 6 à 8 personnes)

Ingrédients :
POUR LE GÂTEAU
4 oeufs
50g de sucre
120g d'amandes en poudre
30g de fécule de maïs
1 cuillère à café de zeste de citron
Du beurre (pour le moule)
De la farine (pour le moule)
POUR LA MOUSSE AUX FRAISES
200G de fraises
60g de sucre
2 feuilles de gélatine
20cl de crème liquide
POUR LA DÉCO
400g de pâte d'amande rose
50g de sucre glace
Quelques gouttes de jus de citon
Des petits oeufs de Pâques colorés
4 mini poules en chocolat
1) Préparer le biscuit : préchauffer le four à 180°C. Beurrer et fariner le moule. Fouetter les jaunes d'oeufs avec la moitié du sucre et les zstes de citron jusqu'à ce que le mélange blanchisse.
Incorporer la moitié des amandes en poudre et la fécule de maïs. Monter les blancs en neige avec le reste de sucre et les incorporer à la préparation précédente avec le reste d'amandes en poudre.
Verser dans le moule et cuire 35 à 40 minutes. Une fois cuit, le démouler et laisser refroidir.
2) Mettre les feuilles de gélatine à tremper dans un bol d'eau froide.
3) Préparer la mousse aux fraises : Mixer les fraises et le sucre. Faire fondre la gélatine avec deux cuillères à soupe de fraises mixées puis mélanger avec le reste des fraises mixées. Ensuite
fouetter la crème liquide bien froide en chantilly dans un saladier froid également. Incorporer la chantilly aux fraises mixées et réserver 30 minutes au frais.
4) Couper le biscuit en 2 disques, étaler une couche de mousse à la fraise sur un disque puis recouvrir du second. Etaler également une couche de mousse aux fraises sur le dessus du gâteu.
Réserver au frais 2 heures.
5) Pour la déco : étaler la pâte à sucre et recouvrir le gâteau avec. Mélanger le sucre glace avec quelques gouttes de citon et dessiner dessus en faisant de zig zags. Ensuite décorer selon vous
avec les oeufs et les poules.
