2) Préparer la béchamel au fromage : faire fondre le beurre dans une petite casserole. Ajouter la farine et mélanger au fouet. Délayer peu à peu avec le lait. Saler et poivrer. Laisser cuire une
dizaine de minutes sur feu moyen pour que la préparation épaississe puis ajouter le gruyère râpé et laisser refroidir.
3) Diviser la pâte feuilletée en 4 recetangles, répartir la béchamel refroidie sur une moitié de rectangle en laissant une bordure. Passer un peu d'eau sur cette bordure, replier le rectangle de
pâte sur la farce puis souder les bords avec une fourchette. A l'aide d'un pinceau, badigeonner les feuilletés de jaune d'oeuf puis dessiner des croisillons. Cuire 20 minutes.
